11/28/2011 1 Comment Crock Pot Mexican Chicken![]() This is a super easy 5-ingredient recipe for the slow cooker. This will be my go-to staple for taco night! So delicious! Crock Pot Mexican Chicken Makes 4 servings 4 x 3 oz chicken breasts 1 cup salsa 1 cup tomato sauce (look for sauce with no corn syrup added) 1 Tbsp chili powder 1/2 Tbsp cumin Mix all ingredients together, placing whole chicken breasts in last. Cook on Low for 5-6 hours or High for 3-4 hours. Shred chicken with a fork and mix with sauce. Put on top of corn tortillas, or lettuce (as shown). Top as you would tacos! I used a bit of 0% greek yogurt and guacamole! Nutrition (per serving of chicken filling only) Calories: 177 Fat: 3.4 g Carbs: 9.1 g Sugars: 3.1 g Fiber: 2.7 g Sodium: 646 mg Protein: 28 g
